Technology Brewing and Malting
The most recent addition to the book pages is an English translation by Dr Trevor Wainwright
of the leading German textbook for training brewers and maltsters. Published in regularly updated
versions over the last 30 years, this
expanded international edition of Technology Brewing and Malting by
Wolfgang Kunze contains 700 pages and includes technology used outside Germany, such as
the use of brewing adjuncts and high gravity brewing. More than 30,000 copies have already
been sold.
The book is a comprehensive account of the technology of beer
production, from the properties of the raw materials, including malt and hop
processing, through wort production and brewhouse yield calculation, to beer
stabilisation, packaging and sensory evaluation. The book concludes with a chapter by H.O.
Mieth, formerly of Tuchenhagen and founder of Miturbo, describing brewery process
automation and integration.
